The Origin
Muje Mesina is a key player in East Guji's rising reputation for producing some of the world’s finest microlots. Nestled in the fertile highlands of the region, the station works closely with local farmers who cultivate coffee at altitudes above 1,950 meters. These farmers harvest ripe cherries, which are then processed with meticulous care at the Muje Mesina washing station.
Equipped with 200 shaded drying beds and several shaded fermentation tanks, the station ensures optimal processing conditions to bring out the best in the coffee.
The Process
This coffee undergoes a natural/dry process that allows the beans to fully absorb the rich, fruity flavours of the ripe cherries. After harvesting, the cherries are selectively picked based on Brix readings to ensure perfect ripeness and sugar content. They are then hand-sorted to remove any underdeveloped or damaged cherries, before being placed on raised African beds to dry for 15-18 days.
During drying, the cherries are regularly turned and covered during midday to avoid overexposure to the sun. Nighttime covers protect the cherries from rainfall and excess moisture. The drying process is closely monitored, with moisture and water activity measured regularly to ensure optimal results. Once the cherries reach the perfect moisture content, they are rested for one month before being milled, graded, and sorted by hand. Finally, the coffee is bagged in GrainPro to preserve its freshness during export from Djibouti.
A Flavourful Experience

Expect vibrant, juicy fruit flavours, with a smooth chocolate undertone and delicate floral notes. The syrupy body rounds out the cup, making this a balanced and elegant coffee that will appeal to lovers of natural-processed coffees.
